Fine-dining chef aims to improve school lunches

After three years at Noma, voted one of the world’s best restaurants, Chef Daniel Giusti will return to Washington, D.C., to focus on improving school lunches.

Giusti will leave the fine-dining restaurant in January to launch his new company Brigaid, which will either renovate or build new school kitchens and staff them with professional chefs., reports grubstreet.com.

Chef Giusti’s new venture faces a number of challenges, including federal nutrition standards and picky student eaters. Giusti recently told the Washington Post that although it's a "huge undertaking and a risky undertaking," he has “no problem giving it all I've got."

Giusti hopes to have the first Brigaid pilot program up and running by next fall.
