Aug. 20—Replacing items such as fried fish, pork chops and turkey piled with gravy with healthier far such as fresh fruits and vegetables and grilled meats has become top priority for the cafeteria at Nashville's Centennial Medical Center.

Middle Tennessee hospitals are part of a national movement among medical centers to improve their cafeteria offerings. For decades, high-calorie and processed foods were the norm in hospital cafeterias. Now nutritional information is posted for menu items, even at some of the fast-food outlets.
