Aug. 13—With menu listings that include items like quinoa-stuffed eggplant with tomato and feta and black bean quesadillas, The Valley Hospital, in Ridgewood, N.J., is promoting a healthy and environmentally friendly lifestyle change for its patients, visitors and staff. After launching its campaign last week, Valley has pledged to go "meatless" each Monday, offering fiber-rich vegetarian meals in all four of its on- and off-site cafés.
In doing so, it became the first hospital in New Jersey to join an ongoing international campaign that aims to help people reduce their meat consumption by around 15%.
