Hospital restaurant a big hit with staff

Essentia Health-St. Mary's Medical Center’s new restaurant, Northern Lights Café, is being hailed by local media as the go-to eatery on campus.

Essentia Health-St. Mary's Medical Center’s restaurant, Northern Lights Café, is making a big impact on staff with its food, according to The Duluth News Tribune.

Northern Lights Café is run by director John Vidmar and manager Chad Nurminen—both chefs—which the Tribune reports improved the food quality by making most of the meals from scratch and using locally sourced vegetables.

The café is now the go-to eatery on campus and has the evening staff looking forward to finding out what’s on the restaurant’s menu, Karen Flynn—an emergency room physician at the hospital—told The Tribune.

"Some of the best meals I have ever had in Duluth are on the night shift cafeteria menu. ...And I just can't get over how this is all happening in a hospital cafeteria."
