Compass One Healthcare’s Chef Brigham “Cookie” Cook is leading important initiatives at Arkansas Children’s Northwest Hospital, but first we had to ask him about the nickname. It all started when he was showing kids a demo on the science of baking cookies, it turns out.

We spoke with this Chef to Watch about his roots in California’s edible classroom scene and Alice Waters, and how he’s getting to know the culinary community in his new home state of Arkansas. He’s working tirelessly on several projects, including a program that trains kids with disabilities kitchen skill and confidence. He’s also got a passion for local veggies and helping kids learn where their food comes from. Recently, he traveled to another Compass account in Charleston, SC, where he’s helping set up shop, taking time out to talk to us about what’s happening, his philosophy on healthcare dining and plans for the seasons ahead.
