Food halls and food trucks have been getting a lot of attention in recent years, with new iterations of them popping up all over the place. (One example: Crave Food Hall, a new eatery adjacent to Purdue University’s campus .) Technomic estimates that food halls are currently a $1.6 billion industry, and that food trucks represent $1.4 billion.
