Vitamin C is the only water-soluble vitamin not in the B-family. It plays many important roles especially as an antioxidant that may reduce risk of chronic diseases. Eating fruits and vegetables rich in vitamin C has been shown to reduce risk of death from strokes, heart disease and other illnesses.
