The dining team at San Francisco State University (SFSU) partnered with Black Residents United in Housing (BRUH) to host a cooking class last week to celebrate African American cuisine and Black History Month.

BRUH President Ibory Moore taught a class of five participants how to make Jambalaya. Along with instructing the class on proper cooking technique, she also shared the cultural significance for each ingredient used in the dish. Executive Chef Brad Petway was also on hand to provide assistance.

The Jambalaya featured a blend of ingredients, including celery, onions, bell peppers, rice, shrimp, chicken, diced tomatoes, tomato paste, chicken broth and various spices.

“We believe that celebrating cultural diversity is an integral part of creating a vibrant and inclusive community," said Sodexo general manager HeeBong Hyun. "This collaboration with BRUH allowed us to explore the rich flavors of African American cuisine and share the stories and traditions behind the food."
