Two Loyola Marymount Eateries Get Green Restaurant Certifications

The Lair Marketplace Dining Hall and Roski Dining Hall at LMU have both received 3 Star Certified Green Restaurant statuses from the Green Restaurant Association.

The Lair Marketplace Dining Hall and Roski Dining Hall at Loyola Marymount University have both received 3 Star Certified Green Restaurant statuses from the Green Restaurant Association (GRA), a national nonprofit organization encouraging foodservice establishments to become more environmentally sustainable. The school says the rating achievement makes LMU the first university in California to become a 3-Star Certified Green Restaurant.

The Lair and Roski met GRA’s certification standards by earning at least 175 GreenPoints in the categories of water efficiency, waste reduction and recycling, sustainable furnishings and building materials, sustainable food, energy, disposables and chemical and pollution reduction. The Lair received 256.05 GreenPoints on the GRA's certification scale and having implemented 94 environmental steps it has gone 156.05% above and beyond the minimum requirements necessary for certification. Roski scored 222.46 points and has gone 122.65% above and beyond the minimum requirements necessary for certification.

• Full Scale Recycling and Pre-Consumer Composting

“LMU is proud to have such a distinguished designation as Green Restaurant Association (GRA) approved,” says Ray Dennis, Associate Vice President Auxiliary Management Business Services. “The GRA is an independent third party that conducts rigorous assessment and verification of Green Practices in Dining Operations. We believe GRA certification provides assurance to Faculty, Staff, and Students that the University stands by its commitment to be environmentally conscious and a global citizen.”

According to Dennis, the 3 Star designation would not have been achievable without the collaboration of Auxiliary Management, Associated Students of LMU and business partner Sodexo USA working together to support the Strategic Mission of Loyola Marymount University.LMU Hospitality by Sodexo also diverts over 95% of its waste from landfills, conserves energy and water, and achieved over 27 GreenPoints in the food category alone.
