Institutional buyers are helping fuel fresh produce sales in Ohio, reports the Packer. That includes school districts and hospitals as well as major higher education institutions like Ohio State University. Reasons cited by produce vendors include a greater emphasis on nutrition, more consumer demand for fresh dishes and commodity prices that are driving up the cost of center-of-the-plate items, putting more focus on produce as an ingredient, according to a spokesperson for the Ohio Restaurant Association.
