Bob Evans plans to expand its hybrid Bob Evans Express concept to up to 10 new locations, many in "nontraditional" environments like hospitals, manufacturing plants and airports, over the coming year, reports the Columbus Business Journal. Currently, there are two outlets, both in B&I environments—one at a BMW plant in South Carolina and the other at the recently opened new Bob Evans headquarters in New Albany, IN.

The BMW unit was opened in conjunction with foodservice contractor AVI Foodsystems and generated $700,000 in annual sales following a $200,000 startup cost.

Bob Evans Express units offer a menu of select Bob Evans favorites such as Wildfire Chicken Salad, sausage gravy and biscuits and slow-roasted turkey in portable form.
