600-Calorie Meals Program Introduced at Duke

Bon Appetit Mgt. Co. is launching Simple 600, a program menuing meals that total 600 calories, at Duke University, reports the Duke Chronicle. The selections will be available at two campus locations: the Marketplace during lunch and the Great Hall at both lunch and dinner. The initial plan is for the program to be in effect only during the week.

The 600-calorie choices will be offered from the vegetarian/vegan stations at the two dining venues. To compensate for the loss of the exclusively meatless stations, vegetarian Simple 600 items will be offered and the school is planning to have at least one meatless option at all stations in both dining venues in the near future.
