Design Elements: An updating of an existing campus eatery, Trillium increased seating capacity by 25 percent by adding a mezzanine level illuminated by skylights while adding airiness to the entire seating area thanks to the addition of booths and alcoves. The new design also increases throughput efficiency
Menu/Stations: Trillium emphasizes world cuisine choices with a variety of stations offering different ethnic cuisines: Capsicum specializes in spicy Latin selections such as pulled pork and empanadas, as well as vegetarian selections and personal pan pizzas; World on Fire is a grill station featuring not only burgers, fries and other hot sandwiches but Mediterranean fare like gyros and slouvaki; the Singing Wok Asian station offers noodle bowls and combo plates with wings, beef, chicken, and tofu; Una Mano has South of the Border choices like chicken tinga, beef or pork barbacoa, hot burittos and fajita burittos. There is also a salad station with fresh greens topped with carved meats and a new customized salad wrap.
