To help celebrate the installation of its first new president in a quarter century, Fairfield (CT) University recently rolled out a weeklong set of events ranging from high tea and an inaugural ball to a family picnic. The menu for the different presidential events varied, from Risoto Crab Cakes and Pumpkin Ravioli with Sage Butter to hamburgers.

The events were all catered by Sodexho Northeast Dining Services, which has a fairly unusual relationship with the otherwise self-operated university dining services department. Sodexho's catering unit operates out of its own kitchen with a dedicated staff, including Catering Director Christina Devald as well as an executive chef and a catering manager. The catering operation services some 1,500 events annually, including off-campus events like private parties and weddings, as well as events at the on-campus private conference center.
