Mustard-rubbed Tofu Stuffed with Spinach and Smoked Gouda

YIELD: 4 servings
2 -12 oz. packages extra firm tofu
2 cloves garlic, minced
2 - 3 cups spinach (locally grown organic if available)
2 Tbsps. extra virgin olive oil
Salt and pepper, to taste
2 Tbsps. mustard powder
1⁄2 tsp. cracked black pepper
2 tsp. brown sugar
1⁄8 tsp. cayenne pepper
1⁄2 tsp sea salt
2 cups shredded smoked Gouda cheese
1 red bell pepper, sliced
1. Slice each block of tofu the full length so there are 8 thin slices. Set aside. Saute garlic and spinach in oil just until wilted lightly season with salt and pepper. Set aside in fine mesh strainer.
2. Mix mustard powder, pepper, brown sugar, cayenne pepper and salt together. Reserve.
3. Preheat oven to 350°F. Place 4 tofu slices on a parchment lined baking sheet, rub lightly with spice mixture. Place equal amounts of spinach and Gouda on each piece of tofu. Layer the other piece of tofu on top and rub equal amounts of the rub on each one to taste. Bake for 30 minutes or until all of the cheese is melted. Garnish with red pepper slices.
