INGREDIENTS:½ oz. butter
6 oz. whipped eggs
2 oz. diced Cajun chicken
1 oz. sliced mushrooms
1 oz. diced onions
2 oz. Monterey Jack Cheese
sprinkle of paprika
2 oz. Santa Fe Dressing, prepared
4 ¼ oz. potatoes
1 English muffinDIRECTIONS:Lightly butter an egg pan and add whipped eggs. Add ingredients, one at a time, to half of the omelet to ensure a piece in every bite. Sprinkle ½ oz. of cheese on top half of each omelet. When omelet begins to set up, work with a rubber spatula by lifting the closest edge and tilting towards you, allowing the eggs to run under the omelet. Repeat. Place in melter to finish cooking. When complete, fold in half, top with cheese and appropriate identifiers, and melt.
