A horticultural breakthrough —an endearing one to those who appreciate small things—is the latest and greatest in genetically engineered vegetables: mini-iceberg lettuce.
The solid, dark green heads grow to the size of a tennis ball or slightly larger (about one-fourth the size of a normal head) and are jam packed with crispy, succulent and tasty leaf.
Ideal for individual portions, mini-iceberg—or "iceberg babies" as the California grower, Boggiatto Produce, calls them—aren't widely available on the market...yet.
Boggiatto, the only U.S. grower licensed to grow and sell the baby icebergs, is currently focused on marketing the mini-icebergs as a more "upscale," delicate lettuce, but says that the item will increasingly become available to produce specialists over the next 12-18 months.
