YIELD: 8 servings

6 oz. Parmesan cheese, dry aged
3 oz. Asiago cheese, dry aged
2 Tbsps. parsley, finely minced
2 Tbsps. salt, finely ground
1 Tbsp. black pepper, coarsely ground
8 lbs. crinkle cut frozen fries, 1/2-in. size
8 oz. clarified butter

  1. Prepare the cheese seasoning by processing the Parmesan and Asiago cheeses in a food processor until finely chopped or ground. Place cheese in a mixing bowl and toss with parsley, salt and pepper; set aside.

  2. Fry 1 lb. of fries at a time according to package directions. Remove from fryer and drain briefly. Transfer fries to a warm stainless steel bowl and drizzle with 1 oz. of clarified butter per lb. of fries.

  3. Add 1 oz. of the cheese seasoning to the bowl and toss to coat. Place the fries on a warm plate and garnish with an additional 1 Tbsp. cheese seasoning per lb. of fries.
