Ingredients
½ cup vegetable oil
½ cup honey
2 eggs
1 tsp. vanilla extract
¼ - ½ tsp. baking powder
1½ cup unbleached flour (whole wheat is fine)
1 cup dry oatmeal
½ cup dandelion flowers, yellow part only
Steps
1. Preheat oven to 375°F.
2. Mix oil and honey, then beat in eggs and vanilla.
3.Stir in flour, oatmeal, baking powder and dandelion flowers.
4.Drop batter by tablespoonful onto greased cookie sheet.
5. Bake for 10-15 minutes. Check carefully during last few minutes to ensure they aren’t overbaking as these are scone-type cookie and bake quickly, so 15 minutes may be too long in certain ovens and altitudes.
