Coconut bacon

YIELD: 1/3 lb.

2 Tbsps. tamari (soy sauce)
½ tsp. liquid smoke
3 tsps. water
2 Tbsps. maple syrup
2 cups coconut, shredded
¼ tsp. kosher salt

1. Combine tamari, liquid smoke, water and maple syrup. Mix well.
2. Add shredded coconut to liquid mixture and combine gently. Ensure all flakes are coated. Spread onto sheetpan in thin layer.
3. Place in 350°F oven and bake for 2 minutes. Remove and stir. Place in oven again for 2 minutes, remove and stir again. The “bacon” should be very close to done at this point. Place in oven for 1-minute increments until golden brown and dry.
4. Season with salt and when cool store in airtight container until needed for service.
