Chilled Soba Noodle Salad with Tahini Dressing

YIELD: 24 servings

¾ cup soy sauce
1 ½ cups sake
¾ cups sugar
6 Tbsps. tahini paste
¾ cup sea salt, Asian style spiced
2 Tbsps. mayonnaise
6 Tbsp. lemon, juiced
24 cups soba noodles, cooked, chilled
1 ½ cups snow peas, julienned
1 ½ cups carrots, julienned
1 ½ cups baby bok choy, thinly sliced
1 ½ cups red bell peppers, julienned
¼ cup scallions, thinly sliced on bias

1. For the Sake-Tahini dressing: whisk together first 7 ingredients.
2. For the salad: Toss dressing with the remaining ingredients. Allow for flavors to marry in refrigerator for 30 minutes before serving.
