For the second consecutive year, the Association of College-& University Food Services (NACUFS) is offering participation in its annual Operating Performance Benchmarking Survey for no charge.

The project gathers aggregated performance measurements of college foodservice departments in areas such as revenues per meal, meals per labor hour, labor cost per meal served, food and beverage costs per meal served and food and beverage costs as a percentage of board and/or cash operation revenues.

Participating NACUFS member institutions receive a free Omnibus Report and confidential Individual Operator Report showing quantitative performance ratios for board, cash, catering and convenience store operations.

The reports allow school dining departments to compare their performance in each area with other schools in the sample, as well as smaller segments of the sample. Data includes cross-tabulations based on type of school, total revenues, number of enrolled students, geographical region, and other such variables.

New this year is a division of convenience stores into traditional and hybrid (those with over 20% of sales from prepared foods). Additionally, a new institutional category for prep schools/academies and community colleges has been added, and these member institutions are particularly encouraged to participate in the survey.
