This Asian-inspired appetizer is based on tofu—but meat-lovers will enjoy it as much as your vegetarian customers. The spicy heat, crispy tempura coating and textural contrast of the custardy tofu make for a very satisfying starter.

Ingredients

1 lb. soft or firm pressed tofu
1 bottle Louisiana hot sauce
2 eggs
2 cups cold sparkling water
2 cups all-purpose flour
Low-linolenic soybean oil, as needed for deep-frying
Green onions, for garnish

Steps

  1. Cut tofu into small cubes. Place tofu and hot sauce in a bowl. Cover and place in the refrigerator for 4-24 hr. Stir periodically.

  2. To make tempura, mix eggs and water in a large bowl. Add flour and mix just until incorporated. If the tempura is too thin, add more flour. If too thick, add more water.

  3. Heat oil in deep fryer to 350°F. Remove tofu from hot sauce. Coat tofu with tempura batter and deep-fry until crisp and golden. Let drip dry on rack and serve hot, garnished with green onions.
