Portuguese Sausage and Onion Stew

YIELD: 12 servings

2 lbs. spicy Italian sausage
2 lbs. mild Italian sausage
2 lbs. yellow onions, sliced
2 lbs. potatoes, cut into ½" cubes
1 lb. celery, sliced
1 lb. zucchini, sliced
2 cans (1 lb. 12 oz. each) tomatoes, whole, peeled, undrained
2 cans (15 oz. each) red kidney beans, undrained
2 quarts water
2 Tbsps. garlic, minced
2 tsps. anise seed, crushed

1. Remove sausage meat from casings. Crumble and saute sausage until cooked. Drain off fat.

2. Combine sausage and all remaining ingredients in kettle.

3. Cover, bring to boil and simmer, covered for 45 minutes or until potatoes are tender and flavors well blended.
