Chef Nathan Duensing
Marsh House at the Thompson Hotel
Nashville

Chef Deunsing makes this signature marinade in house, using green habanero hot sauce as a base. Its bright flavor and color complement grilled mahi mahi, shrimp or summer vegetables.

Ingredients

1 cup olive oil
2 limes, juiced
2 lemons, juiced
1 orange, juiced
2 oz. green onion
3 oz. cilantro leaves
3 oz. parsley leaves
2 oz. basil leaves
2 oz. mint leaves
4 garlic cloves
4 tbsp. salt
3 tbsp. green habanero sauce (more if you like it spicier)
2 lb. assorted fresh seafood or vegetables

Steps

1. In blender container, combine all ingredients except seafood. Puree until well-blended.
2. Marinade mahi mahi, shrimp or vegetables for several hours.
3. Preheat grill. Cook seafood or vegetables until cooked through.
