Switch up your burger menu with this unique and flavorful duck burger with rosemary butter. 

Ingredients

2 lb. ground duck meat
3 tbsp. breadcrumbs
2 tbsp. minced onions
2 tbsp. chopped parsley
2 tbsp. lemon juice
2 tbsp. Dijon mustard
1 tsp. sea salt
1 tsp. black pepper
1 tsp. minced garlic
Rosemary Butter (below)
4 focaccia buns, split
4 slices red onion

Rosemary Butter
4 oz. butter, softened
1/4 cup sour cream
1 tbsp. brown sugar
1 tbsp. lemon juice
2 tsp. Dijon mustard
1 1/2 tsp. grated lemon zest
1 tsp. fresh rosemary, finely chopped
1/2 tsp. salt
Dash hot sauce
3 tbsp. chopped parsley

Steps

  1. In large bowl, combine first 9 ingredients. Shape into four 1/2-in.-thick patties. Place on plate; cover and refrigerate at least 1 hr.

  2. Meanwhile, prepare Rosemary Butter. Divide mixture in fourths.

  3. On grill, cook patties until bottom side is marked; brush with 1/4 butter mixture. Flip patties; brush with another 1/4 butter mixture. Grill 5 to 7 min. or until desired doneness.

  4. Toast buns. Brush tops and insides with remaining butter mixture. Serve patties on buns topped with red onion slices.  

Rosemary Butter

  1. In food processor, combine all ingredients except parsley; process until smooth. Stir in parsley.
