Cumin-Scented Mashed Potatoes

Yield: 40, 1⁄2 -cup servings
1 bag Nature’s Own® Potato Pearls
Premium Mashed Potatoes (29.3 oz.)
1 gal. boiling water
3 Tbsps. cumin seeds, toasted, ground
4 Tbsps. cold, salted butter, divided into
1⁄2 Tbsp. pieces *
ground cumin, as needed
3 oz. green onions, finely sliced
Empty bag of Nature’s Own Potato Pearls Premium Mashed Potatoes into large mixing bowl. Combine boiling water and toasted cumin. Pour seasoned boiling water over potatoes; stir to mix well. Let stand 5 minutes.
Add butter pieces; whisk until smoothly blended and butter is melted. Hold potatoes covered.
Garnish each serving with light dusting of ground cumin and 1 teaspoon sliced green onions.
*Enhanced garnish idea: Prepare seasoned compound butter with salted butter, ground cumin and sliced green onions. Use cold to garnish each serving of potatoes.
Suggested Serving Ideas: Serve potatoes with grilled salmon or pan-seared chicken breast prepared with apricot-jalapeno jam glaze.
