Sweet but crisp is the key to these tortillas, filled with apple pie filling and enhanced with sugar-cinnamon topping before heating until warmed through and crunchy. 

Ingredients

½ cup granulated sugar
2 tsp. ground cinnamon
Vegetable oil, as needed
24 8-in. flour tortillas
2 quart Lucky Leaf Apple Pie Filling
1 ½ cups light sour cream, for garnish, if desired

Steps

  1. Preheat oven to 350°F.

  2. Combine sugar and cinnamon in small, covered container; hold.

  3. To heat tortillas, place ¼ tsp. oil in hot, heavy skillet; heat tortillas, one at a time, for 15 seconds on each side and stack until ready to fill. Add extra oil to skillet for each tortilla as needed.

  4. For each crisper, place softened tortilla on flat surface and fill with ⅓ cup Lucky Leaf Apple Pie Filling and roll up. Place flat in greased full-size hotel pan in two rows, seam side down. Brush tops of rolls lightly with oil and sprinkle tops evenly with cinnamon sugar mixture. Cover and refrigerate until ready to heat and serve.

  5. When ready to serve, heat pan of roll-ups/crispers in oven for 20 minutes, or until completely heated through and crisp. Serve each crisper with 1 tablespoon sour cream, if desired.

Additional Tips

Tortillas may be just folded in half, like a quesadilla, instead of rolling up.
