Mango Whole Wheat Brownies

These brownies are nice and fudgy but get a bit of a health halo from the addition of fresh chopped fresh mango and whole wheat flour. Chef Allen Susser complements the tropical fruit with hints of cinnamon and almond extract. The brownies are chocolatey enough to be an indulgent treat that’s also a good-for-you snack.

Ingredients

2 oz. unsweetened chocolate

½ cup whole wheat flour

½ tsp. cinnamon

½ cup olive oil

½ tsp. salt

½ tsp. vanilla extract

¼ tsp. almond extract

1 cup light brown sugar

2 large eggs

1 cup chopped walnuts

2 ripe mangos, peeled, pitted and diced, divided

 

Steps

1. Over a double boiler, melt chocolate; set aside to cool.

2. In medium bowl, whisk flour, cinnamon and salt together; set aside.

3. In large bowl, whisk olive oil, vanilla and almond extracts. Add sugar to oil mixture; whisk in eggs, one at a time. Stir in cooled chocolate. Using a spatula, fold in flour mixture until just incorporated. Stir in walnuts and half of the mangos.

4. Preheat oven to 350 F. Grease and flour 8-inch square baking pan. Pour batter evenly into prepared pan. Sprinkle remaining mango evenly over top of batter.

5. Bake brownies 40 minutes or until toothpick inserted into the center comes out clean. Cool completely before cutting into bars.
