These mini ice cream sandwiches are simple to create and make an impressive presentation. The applications are many, including kids’ menus, coffee cafes, bakeries, college dining and shareable dessert platters at casual dining restaurants.

Ingredients

6 telera slider rolls, split in half

Unsalted butter, softened to room temperature

Granulated sugar

Assorted ice cream flavors

Candy sprinkles, finely chopped nuts and other edible garnishes

Steps

  1. On each slider half, spread a thin layer of butter; sprinkle sugar on top. Very briefly place slider halves under broiler until butter bubbles up and the sugar caramelizes.

  2. Cool bread, then place a small scoop of ice cream on botton half; make a sandwich with top half, pressing down slightly. Roll sides in sprinkles, nuts or other garnish.

  3. Freeze sandwiches if not eaten immediately.
