Cinnamon Roll Ice Cream Sandwiches

When cinnamon rolls meet ice cream, it's a very cool partnership indeed. This recipe from General Mills Foodservice is just the thing for a summer afternoon treat.

When cinnamon rolls meet ice cream, it's a very cool partnership indeed. This recipe from General Mills Foodservice is just the thing for a summer afternoon treat. 

Ingredients

24 frozen cinnamon rolls

1 1/2 cups prepared dulce de leche

3 cups vanilla ice cream

 

Steps

1. Thaw cinnamon roll dough, covered, either at room temperature 15-30 minutes until flexible or refrigerated overnight.

2. Roll out each dough piece to a 4-inch diameter

3. Cook on a lightly greased griddle preheated to 350°F, 4 1/2 minutes per side, until cooked through; cool completely.

4. To assemble: Spread 1 Tbsp. dulce de leche on every cinnamon roll piece. 

5. Add a #12 scoop (2.7 oz.) of ice cream on cinnamon roll piece, then top with a second cinnamon roll piece, dulce de leche side down.

6. Gently press sandwich together to spread ice cream to the edges. Serve immediately or wrap in plastic and freeze until needed.
