110-Calorie Green Tea Tapioca Pudding

YIELD: 6½ cups

1½ pint fat-free milk
4 green tea bags
12⁄3 oz. tapioca pearls
2¼ oz. granulated sugar

1. In a pot, heat skim milk over medium heat until it starts to simmer. Add tea bags. Remove from heat and steep for 20 minutes.

2. Remove tea bags and add tapioca pearls. Bring to a boil and then simmer for 45 minutes or until a nice creamy texture forms and the tapioca pearls are tender. Add sugar. Stir gently until sugar is completely dissolved.

3. Pour ½ cup of the pudding in appropriate pudding glasses or cups. Place the cups in the refrigerator and let cool.

4. Garnish with fresh berries and serve cold.
