University hosts Real Food Challenge Dinner

The dinner aimed to celebrate the increased use of local ingredients used in campus meals.

Lehigh University in Bethlehem, Pa., hosted a Real Food Challenge Dinner, The Brown and White reports.

Held April 19, students enjoyed dishes made from ingredients such as local kale, free-range turkey and cage-free eggs. The event aimed to celebrate the school’s commitment to increasing its purchase of local ingredients to 20% by 2020.

School officials are looking at ways to reach the goal before 2020, such as by purchasing local chickens that were humanely raised.
