University adds microgreen cabinet

The dining team at Marshall University partnered with the school’s Office of Sustainability to purchase a cabinet from which it can source fresh herbs and microgreens.

Marshall University in Huntington, W.Va., has partnered with the school’s Office of Sustainability to launch several projects for the upcoming school year, Huntington News reports.

Beginning in the fall, the dining team will be able to source fresh herbs and microgreens from the school’s new growing cabinet that will be on display for consumers in one of its dining locations. Sodexo purchased and will operate the microgreen cabinet. The Office of Sustainability will provide the seeds.

The school is also looking to start a compost program and a food recovery program.
