College/university dining fully got its legs back in the past year after pandemic disruptions mostly dissipated. That doesn't mean challenges didn't intrude, especially labor shortages and decisions on how best to utilize the expanding array of high-tech solutions being rolled out by vendors.

Meanwhile, colleges were faced with the demographic trend of a declining college-age population that threatens to reduce the pool of available students. For a growing number, this means doing a better job of offering a vibrant and attractive campus life, something dining programs have a major part in.

The result was a slew of innovations and creative approaches to menus, operations and facilities. Here are a dozen FM stories from the past year highlighting some of those developments...
