Princeton University has selected three design firms with which it will work to revamp its campus dining halls, according to a report in the Princeton Weekly Bulletin. They are Michael Graves & Associates of Princeton, Sheila Bridges Design of New York and Mesher Shing of Seattle. Each will work on a different dining facility. The project is part of Princeton’s plan to convert its current system of five two-year colleges to three four-year residential colleges paired with three two-year residential colleges. The changes are expected to increase the size of Princeton's undergraduate student body by 500 students by 2012. As part of the planning process, a Task Force on Dining and Social Options recommended a series of changes to improve the quality of the food and dining atmosphere at the colleges. They include diminishing the institutional feel of the dining halls by creating intimate eating spaces as well as implementing a "marketplace" concept in the serveries featuring a more retail, cook-to-order format.
