FM On Demand with Tara Fitzpatrick: College dining fit for a king in the UK

A frequent visitor to the U.S. via events like Menus of Change and NACUFS conferences, Head of Bars and Dining at the University of Reading Matt Tebbit shares his impressions on college dining here vs. there and reflects on the passing of Her Majesty Queen Elizabeth II and the country’s mourning period, which coincides with the start of the school year.

This very British episode of FM On Demand with Tara Fitzpatrick was recorded Sept. 9, the day after Queen Elizabeth II’s death, obviously a time of morning for the United Kingdom. Matt Tebbit had agreed to be on the podcast weeks before, to talk about his expeditions to the U.S., in order to check out college dining and improve his own operation. We talk a bit about the Queen, then delve right into Tebbit’s plans for the start of the new school year at the University of Reading, which will have just a few scheduling hiccups due to  this time of mourning leading up to the Queen’s funeral.

Tebbit has become a popular member of NACUFS, sharing recipes from across the pond and becoming the go-to guy for scone recipes and all things British. Over the summer, his passport was stamped quite a bit in as he traveled to Menus of Change at The Culinary Institute of America in upstate NY and the NACUFS conference in Spokane. As he tells it, at one point, a U.S. customs agent commented, “Back again?”
