When you’re a student at The Culinary Institute of America, you don’t need a dining commons, right? You just eat what you make in class. While that was the case for most of the esteemed cooking school’s students, it’s no longer true. With the June opening of The Egg, students now have the opportunity to dine—and cook—with their peers in a dining commons setup. Earlier this month, FM got a firsthand look at The Egg in action. With a cool mixture of modern urban design elements, The Egg is a cutting-edge college dining facility geared toward future foodservice professionals.
