Postmodern Foods Founder/CEO Denise Hicks set up shop in the Longworth Cafeteria on Capitol Hill in Washington, DC, on March 12th as part of the U.S. House of Representatives' monthly Great American Companies series, which highlights companies demonstrating American innovation and entrepreneurship. Hicks' company delivers "health-supportive, plant-based foods and drinks, inspired by culinary traditions, influenced by progressive nutrition, and made with the best possible, organic ingredients" to homes and businesses in the DC Metro area.

At Longworth, Hicks and an assistant served a massaged Kale Salad (recipe here), Cinnamon’y Cashew Milk and Raw Greens Juice over a three hour period in the middle of the day. Her appearance was facilitated by a partnership between Restaurant Associates, which operates Longworth, and the Congressional Vegetarian Staffers Association.

"The promotion created a tremendous amount of buzz in the café and plenty of positive feedback," says Restaurant Associates General Manager Bjorn Verduijn. "Afterwards we discussed the possibility of a once monthly repeat with different entrees and turning a station into a vegan station for the day."
