HUNTSVILLE, Ala.—Healthy food can be tasty, too.

The Sparkman Cafeteria and the Von Braun III Cafeteria offer a new healthy choice, paleo-inspired meal plan. “A lot of people refer to it as the caveman’s diet,” Chris Isbill, business manager for the Post Restaurant Fund, said laughing.

“The basis of paleo is a healthier choice option,” he explained. “We use all natural oils. Examples would be coconut oil, coconut milk, olive oil. There’s no dairy products used with paleo. The exception is clarified butter. All of the milk fats are actually cooked out of the butter to create a healthier butter option.”
