Breakfast Republic
San Diego

At this multiunit breakfast spot in San Diego, pancakes are in high demand. To keep up with orders, the kitchen prepares a basic recipe that adapts easily to variations. Here, the pancakes are drizzled with cinnamon sauce and white frosting so they resemble cinnamon rolls in flavor and looks.

Ingredients

Pancakes
4 cups buttermilk pancake mix
1 1/2 cups whole milk
2 eggs
1/4 cup granulated sugar
1/2 tsp. baking powder

Cinnamon sauce
1/4 lb. unsalted butter, melted
1/2 cup granulated sugar
1/2 tsp. ground cinnamon

Frosting
1/2 cup whole milk
1/4 cup confectioners’ sugar
1 1/2 tsp. vanilla extract
1/2 cup chopped walnuts

Steps

1. Prepare pancakes: In large bowl, combine pancake mix, milk, eggs, sugar and baking powder; whisk until ingredients are well combined; set aside.
2. Prepare cinnamon sauce: In medium bowl, stir butter, sugar and cinnamon until well blended; set aside.
3. Prepare frosting: In small bowl, stir milk, confectioners’ sugar and vanilla until well blended; set aside.
4. Place griddle over low heat. Using a 4-ounce ladle for each pancake, pour batter onto hot griddle. Spoon on cinnamon sauce in a circular shape; cook until bottom edges of pancake start to look dry. Flip pancakes; cook about 4 minutes more.
5. To serve, drizzle with frosting and sprinkle with walnuts.
