Sometimes it’s tough to get kids to eat fresh fruit at school breakfasts. Foodservice director Caplon meets the challenge by folding fresh blueberries into a breakfast burrito, boosting the item’s nutritive value, flavor and appeal.

Ingredients

1 egg
1 oz. shredded turkey
2 tbsp. canola oil
1 oz. shredded sharp cheddar and mozzarella cheese blend
1/8 cup fresh blueberries
1 10-in. tortilla

Steps

  1. In a bowl, mix egg and turkey together.

  2. Heat a pan and add canola oil. Add egg and turkey and scramble until firm. Add cheese and mix until melted.

  3. Place egg mixture on tortilla and add blueberries. Fold tortilla into burrito shape, cut in two and serve.

Yield: 1 burrito
