This is a menu item offered in our Grab & Go units. We take the popular Buffalo chicken wing flavors and incorporate them into a boneless chicken wrap, eliminating the issue of having to deal with bones. The wrap has become a “sacred cow”—there even was an article about it in our school newspaper.
Ingredients
12 garlic herb wraps
12 oz. shredded lettuce
24 breaded chicken tenders
1 1/2 cups Buffalo wing sauce
1 lb. tomatoes, cored and diced
1 1/2 cups blue cheese dressing
1/4 cup diced scallions
Steps
Deep-fry tenders to internal temperature of 165 F; hold in warmer.
Spread 1 ounce lettuce horizontally across each wrap. Top lettuce with 2 cooked chicken tenders.
Drizzle 2 tablespoons Buffalo sauce across chicken, and top with 1 ounce diced tomatoes and 2 tablespoons blue cheese dressing. Garnish with 1 teaspoon scallions.
Roll and serve immediately.
Yield: 12 wraps
