This risotto was an entrant in the culinary competition at FoodService Director’s 2019 MenuDirections conference. It was developed by Gargano, an executive chef at Ezkenazi Health in Indianapolis, and Perez, a ProStart student attending Meadowcreek High School in Norcross, Ga.
