Three main dining halls at Boston University participate in a Wholesome Roots initiative, with weekly menus showcasing foods that have a lower carbon footprint, such as plant-based proteins, poultry and fish. In early 2019, BU Dining partnered with a student government committee to promote a weeklong vegetarian challenge in conjunction with Earth Week. The program’s goal is to ensure that its seafood purchases progress from 80% to 100% sustainable by 2020, including fresh, frozen, shelf-stable, wild-caught and farm-raised varieties.
