UCSF is the first healthcare foodservice organization to receive a Real Certification (eatreal.org), which recognizes operators for their commitment to sustainability and nutrition. In a continued effort to offer more plant-based options, UCSF also introduced a blended mushroom-and-beef burger in both patient dining and retail cafes and introduced a “protein flip” concept called Roots and Shoots, where diners order grain- and vegetable-centric items with protein as a side dish.
