We are serving more made-to-order salads and bowls, which are full of raw fruits and veggies. These require little experience and only minor knife-skill coaching on the front end. We pair the produce with value-added precooked proteins, which have the dual benefit of consistency of product and the reduced availability of a more advanced skill set.
