At California Polytechnic State University, directors plan to launch teaching kitchens this fall. Two cooking classes will be offered each week for up to 30 students, with fees covering just the cost of the food. It will be a great way to help the students learn food prep, appreciate healthier eating and understand how University Dining prepares their food, Executive Chef Ken Kline says.
