HOMEGROWN PRODUCE

Anticipating a growth in demand for healthier, cleaner, fresher and better-tasting food among the younger baby boomers that are starting to move in, the 700-resident Virginia Mennonite Retirement Community in Harrisonburg, Va., established its own 4-acre farm in 2013. The land produces more than 36,000 pounds of produce annually, supplying at least 70% of the community’s produce needs during summer. A blast chiller also freezes some veggies quickly for winter use, while others are pickled or otherwise preserved.
