The Davis County (UT) Health Dept. has contracted with the county jail to prepare and serve meals five days a week at its three senior centers. The food—100 meals a day at each center and 450 through Meals on Wheels—is cooked and served partly by inmate labor managed by Compass Group. Previously, food had been brought in from a central site in Salt Lake City, and it had gotten numerous complaints about its low quality.
